Clam Chowder

SERVES: 4  |  PREP TIME: 15 minutes MIN  |  COOKING TIME: 20 minutes MIN  

Ingredients

  • 1 package Clam Meat, Cooked*
  • 1 cup Celery, diced
  • 1 cup Potatoes, diced
  • 1 cup Onion, diced
  • 1 quart half and half cream
  • 3/4 cup Butter
  • 1/4 cup Parsley, chopped
  • 3/4 cup Flour

Directions

In a large, heavy saucepan, melt the butter over medium heat and add celery, potato and onion. Sauté. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables. Heat through, but do not boil.

Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, season with salt and pepper.
